Cooking: Chicken and Guacamole Tostadas
A little while ago, Jack and I started getting fresh fruits and veggies delivered to our door from Farm Fresh to You. This has led to a lot of cooking adventures. We have to cook almost every day to use up all of the wonderful food in our box by the end of the week (well, by Tuesday when the new box comes!).
Some of the things I’ve made this month include:
- Chicken and Guacamole Tostadas from Cooking Light magazine.
- Blueberry Banana Bread
- Cherry Chutney
- Garlic Brown Sugar Chicken
- Manicotti
- Balsamic Strawberries with Ricotta Cream
A new box comes tomorrow… I’ll let you know what I make.

A note from Beale.
Beale is on the east coast with her daddy this week. She sent me this e-mail this morning:

Beale is so easy
Hi friends… and fellow puppy raisers.
I need to brag a bit on my pup. She’s so good. And I didn’t teach her to be this way. Today we went to the fabric store, a huge thrift store and to to the ATM. She behaved beautifully through it all, even in the 95-degree heat. Her favorite thing to do on these kinds of days is to “buckle up” on the floorboards of my truck (she gets full air conditioning!).
Sunday was Trego’s second birthday; Beale is about eight months old. I’m realizing more each day how much Beale is NOT like Miss Trego. Trego was, and always will be, my baby girl. She was perfect. I swear. But it was a steal your shoes, tease you when you call her name, refuse to come inside, bark when you want her to be quiet, impatient at the dinner table kind of perfect. Beale is just the regular kind of perfect. She does what’s expected. She walks quietly on a leash. She comes when calls and sits when asked. She’s easy and perfect and I feel very lucky to have had both of these kinds of “perfect.”
That’s all.

p.s. Just for the record, we think we’d keep Beale if she doesn’t make it in the program.
Tori and Nixon received our Paw it Forward!
Tori is a friend of a friend of mine. Nixon is Tori’s pit bull. Check out Tori’s post about receiving my FIRST EVER Paw it Forward package. If you missed out on Beale’s Paw it Forward gifts, leave a comment and snag one of Nixon’s!

Paw it Forward – Update!
We have all three of our Paw it Forward recipients! Bhodi, Watty and Nixon should get their packages soon! (I am putting them in the mail TOMORROW!)
It has been so fun to put together packages for these three pups. I have met Bhodi’s parents in person in Lawrence, Kan., and Nixon’s parents are friends of a friend, but Watkins is an online-only friend. I’m glad to have such a wide variety of people in this Paw it Forward level.
If you’re new here and don’t know how to Paw it Forward, check out the PDF on the sidebar… it will explain the process!
